Southwest Chicken & Pasta featuring Kraft Fresh Take

I am so excited to tell you that I am taking part in the Kraft Fresh Take Flavor Makers program! As a part of the program I will be showing you some delicious ways that you can make Kraft Fresh Take a part of your meal plan. During the course of the program I’ll be sharing some great recipes and you can follow along with the other Flavor Maker bloggers who will be using the hashtag #KraftFreshTake.

Kraft Fresh Take is a combination of Kraft cheese and a expertly crafted breadcrumb mixture. It is perfect for chicken, pork, fish or on a side dish and is super easy to use to make a delicious meal. Kraft Fresh Take is available in several different varieties and the variety I’ll be showcasing is the Southwest Three Cheese.  As a part of the program I was given challenge cards to try to follow when coming up with my recipe. This is my first challenge card -

When coming up with my recipe I knew that I really couldn’t incorporate the colors into the meal if I expected my boys to eat it because they’re so picky. The only thing I could think of that is purple is eggplant or onion and unfortunately those are things I can’t get the boys to eat. This recipe can be made in 30 minutes or less and it was definitely inspired by flavors of the southwest so at least I was able to incorporate two of the three challenges into my recipe.

I chose to keep the recipe fairly simple so that it would be good for those nights when you just don’t want to spend too much time in the kitchen. Here are the main ingredients (minus the chicken) -

This is what the Kraft Fresh Take looks like when you open the package. You simply pull the plastic apart and shake it up to mix the cheese and breadcrumb mixture. It’s very easy!

By now I’m sure you’re curious about the recipe, so without further ado, here it is!

Ingredients
  • Kraft Fresh Take Southwest Three Cheese
  • 1 lb. chicken tenders
  • ½ can of black beans
  • can of Rotel
  • can of cream of chicken soup
  • 4 oz. cream cheese
  • ¼ cup sour cream
  • ½ box Rotini pasta
  • ¼ tsp onion powder
  • ½ tsp garlic powder
  • ¾ tsp seasoned salt
  • ½ tsp pepper
  • ¼ – ½ tsp chili powder (depending on how spicy you’d like it)

Instructions
  1. Rinse chicken tenders and pat dry with paper towel. (this makes the Fresh Take stick better)
  2. Follow directions on Kraft Fresh Take to bread chicken tenders.
  3. Bake at 375 for 20 minutes or until chicken is done.
  4. While chicken is baking cook your pasta.
  5. Mix the remaining ingredients together over medium-low heat in pan so they melt together.
  6. After your pasta is cooked and drained, pour melted ingredients over it and mix together.
  7. Dish the pasta mixture onto a plate, top with chicken and serve.
